Oxygen free radicals act on unsaturated fatty acids of lipids to form lipid peroxides;the latter is gradually decomposed into a series of complex compounds,including malondialdehyde (MDA). The level of lipid oxidation can be detected by detecting the level of MDA. Malondialdehyde (MDA) can be condensed with thiobarbituric acid (TBA) under acidic and high temperature conditions to form a brownish red trimethoprim (3,5,5-trimethyloxazole-2,4-dione). Its maximum absorption wavelength is 532 nm. The content of MDA in the sample can be estimated after colorimetry.
